Happy Tuesday everyone!
Over the weekend I always take time to meal prep for the week ahead. During the Fall my favorite thing to make is soup. Today I am going to be sharing with you a quick and easy carrot soup recipe I found on Pinterest.
Even if you aren't a cook, this recipe is so simple to follow and it doesn't require a lot of ingredients. That makes it inexpensive as well. :)
I chopped up the onions and then tossed them in to the pot with some olive oil and sautéed them until translucent. The soup hasn't even started cooking and the kitchen smells amazing.
As a quick time saver, I purchased pre-cut carrots, rinsed them off and then added them to to pot.
Using a micro-plane tool, I shaved up a Tbsp. of fresh ginger and added it to the pot. Ginger is a great natural ingredient to use to soothe an upset stomach too.
Once all of the ingredients are in the pot, cover and boil on a medium high heat for about 25 minutes.
After the time is up, I used my immersion blender to blend everything together.
I topped it off with a dollop of sour cream and.........
Ta-Da!!! Carrot Soup! To make this vegan, just leave out the sour cream or just use a dairy free alternative. :)
