Happy Thursday everyone!
During the Fall I love to get back into baking. Since the weather is cooler, it's the perfect time to start using my oven again. As I've said in the past and if you couldn't already tell, I am a huge foodie! My favorite kinds of foods are the ones I can bake. It's also fun being able to take traditional recipes and try to make them healthier.
Today I am going to be sharing with you some tricks I like to use when I bake.
I found this Pillsbury quick bread muffin mix at Shop Rite. To make this muffin mix my own and a little healthier, I chose to add coconut oil and one of my favorite nut milk to the recipe.
Being healthy doesn't have to be hard! Granted the muffin mix may not be the healthiest thing but by incorporating healthy ingredients you can make this muffin recipe a better option for a quick breakfast treat.
I always make sure I use unsweetened nut milk this way it controls the amount of sugar that goes into the recipe. Coconut oil such a great option too because of all the healthy fats it contains.
Once everything is mixed, I pop my muffin tins into the oven and wait for the yummy goodness to be done.
Viola! Yummy, Nutty, Healthy muffins! They taste so good you will forget they came from a box!
